Even with me opening the throttle all the way open I wasn't seeing any pump shot... Adjustment is WAYYY off? need a new accelerator pump diaphragm thing? Why would it run good with the choke on, but once it opens go back to running bad??

while the choke is on..the mixture is rich to help the engine run while it is cold..
the acelerator pump is a shot of gas to over come a lean condition as the throttle blades are opened....the pump shot riches up the mixture...

Well I really can't comment on whether or not you need to change pump cams, but at WOT, there should be about .015" clearance between the accelerator pump linkage arm and the bottom of the adjusting screw.
The accelerator pump basically eases the transition between the idle speed circuit and the main circuits. If theres too much clearance, the carb basically starves for fuel in that split second when you punch it. The pump arm should start moving as soon as the throttle begins to move.
If that adjustment is within spec, you might need to go with a larger pump nozzle.
