The T.Q. is going to have the best calibration since it is an oem carb. All 4 major circuits will be more correct as-is VS the Edelbrock as-is. But with that said, I do believe that the Edel. would work well and worst case, simply get a tuning kit for the Edel. and tune the carb as needed. It has been my experience that a stock pre '75 T.Q. VS an Edel. 600 on a mild 340-360 will have the advantages of better gas mileage and performance. Know that a T.Q. will 'tune' externally on all four circuits without the need for tuning parts and that is the beauty of a T.Q. As with any carb, if it is in need of rebuilding, it will suffer in performance. I personally like the T.Q. the most since it offers the following advantages: 1)small primaries for exceptional gas mileage, 2)black phenolic bowl that keeps gas temps 20-25 degrees cooler=more performance in summer heat, 3)very easily tuned on all circuits externally, 4)makes very good power! This is also true even with bolt-on mods to the engine, David.
