I'm having an issue with my car upshifting early at WOT in Drive. I have a Lokar kickdown cable setup on the car, adjusted to be at the end of travel at WOT and the car still short shifts. Is there an adjustment I can make internal to the trans to fix this? The car is new to me and hasn't been on the road prior to my ownership so I'm not sure what is inside the trans. IT bangs the shift when it does upshift but it just shifts too early. Is there anything I can adjust to help it rev out a bit more?

It may be the valve body or linkage with the lokar cable setup. When I got Lokar kickdown setup, the outer cable sheath was too long to where I did not get full movement of the kickdown lever. So I would double check the Lokar kickdown first.
If that is good, check the valve body throttle pressure valve is assembled and adjusted correctly.

Unfortunately I don't have a tach. It feels like it's about 4500-5k, just after I feel the secondaries come in (still need to dial in the AVS spring).

If it is in the 4.5-5k range, then there's nothing wrong with your setup. Stock these transmissions were not setup to wind out that high. Want to go higher without manually shifting it? Knock up cope racing trans for an aftermarket governor to get the rpm you desire.
