There was an art to making things look like they were in color when they were filmed in black and white. Hitchcock couldn't use blood for the Psycho shower scene as it looked fake, I think they used chocolate syrup. Check Youtube for color filming bits of original I Love Lucy episodes - very neat to see
Some of the early color stuff does look really unique I think, different feel to it. And the black and white stuff of it's era was done well I think, you don't really seem to miss anything in watching it.
