My '69 Barracuda had four 1/2"+/- blobs in the engine bay - one in each corner front and back to fill gaps or holes. Plus two more on the cowl pinch weld to fill alignment holes. Plus two more smaller ones on the top side of the pinch weld to fill two small holes.
If you don't see two dolphins, you need a vacation.

Top photo shows front corner of engine bay where a blob that covered a hole was removed. Same on both sides.
My memory is a little dim on this, but I think there were one or two smaller holes on the top side of the cowl pinch weld that were covered with small blobs, second photo.
If you don't see two dolphins, you need a vacation.

Engine bay caulk was a dark colored caulk, not tar based, applied before paint. Solvents in the caulk bled into the body paint and changed the paint color.
The trunk caulk was white and way more than needed, also applied before paint. The caulk was, as said, at least 1-1/4" wide, maybe more - very sloppy. The white caulk dried hard and terminated on the center of the axle hump. The paint on the trunk caulk didn't change color as much as in the engine bay.
Caulk from the axle hump forward into the cabin was a black, oily, tar based caulk that bled into the paint on top.
The caulk at the inner fender to fender bolt joint was apparently a different type of caulk from the others, non-hardening and grainy.
If you don't see two dolphins, you need a vacation.

The Body service manual is what you need. Shoot me a pm with your email address and I can send you a copy in pdf. Its a 71 dodge manual but will be the same. I also have a 72 manual but its hard copy. It shows you every spot they put sealer and says how wide of a bead to put.

do restorers reapply the caulk? Yes, mainly because if you look closely, you will see holes and gaps in the panel joints and at corners. Another reason is rust prevention.

How about inside the vehicle... when the caulk is removed from main floor pans, do restorers reapply the caulk? Interior caulk will be hidden, which means just the minimum reasonable amount needed can be applied by a restorer, rather than spewing bulk like the factory did for high speed without careful aiming.
