I'm trying to set the fast idle for cold starts and I can't find any info on the correct way to adjust the carb and choke.

Most Holley chokes call for setting the choke plate so it touches or almost touches (1/6 to 1/8 inch separation ) the top of the choke tower on the main body when cold scope
I would remove the choke stove from the manifold and see what it is set at, if you don't like it that way either tighten or loosen up that setting to get it where you like it wrench work twocents

There is a screw on the passenger side of the carb. down low on the throttle plate that will adjust into the plastic piece on the throttle shaft, you have to manually close the choke all the way and then set the amount of turns you want on the highest step scope
Not easy on any six pack motor with the center carb. on the motor whiney shruggy

The last one I did had a tang that sat inside the plastic fast idle cam that you bend to adjust fast idle speed. The tang has a screwdriver slot that you stick a screwdriver in and bend it. Closer to plastic is faster.

There is also a tang on the back side of the plastic cam that adjusts what step the front tang is on. Make sure the plastic cam moves freely on its shaft as fuel spills, heat, and age sometimes makes them stick.

I dont have 340 specs sorry. On a 440 you set chokestat in manifold 2 notchs rich, fast idle is 2200, 1800 with cas, on the second cam step, vac kick is a #38 drill bit, choke unloader at wide open is 5/32 bit.

You should be able to find the specs in a Chilton or Motors manual and of course a factory manual. But it has a few specs to set if you want it set to factory settings. One adjustment set the position of the fast idle cam in relation to how far the choke plate is closed and most will have an eng rpm spec for the second or next to highest step on the fast idle cam. And the fast idle cam position needs to be set in acordence with the choke pull-off setting. I found over the years that on most muscle cars that may be modified I usually set them to factory specs and then adjust from there on modded cars. I will keep them overnight to see how all on the choke system works in the morning as many of our muscle cars are modified and need to be tweeked from factory specs. So I like to have all the specs for the carb I am woking with so it gets set right so that the fast idle will drop from the high step to the second step once the choke pull-off opens the choke the proper amount.
