I need to re-grease the various hinges and latches on my car so I'd like to know what type of grease is recommended for this. Would I use something like white lithium grease, wheel bearing grease or something else?

No grease, it will make a mess and not get in tight areas too well.

I use Tri-flow spray lube with Teflon. Hinges, locks and latches, window regulators, etc. It gets into the pins and small parts easily, and lasts much longer than WD-40. Use it every fall on the daily drivers also.
