I'm getting a chassi shop to do all the chassi, headers and engine plates done in my car. My question is can I use a stock block for mocking up the mid,front engine plates and headers or should I use the KB block that is going to be in the car?

Stock block is fine... a mock block is even better...
WAY lighter to lift(but you dont care.. your not lifting it) LOL
but the heads should be the right heads to do headers
EDIT
UNLESS its a tall block then yes it would be needed
for the header work.. not for the front and mid plates
