Ever pull a old factory bolt out and break it? You will be glad you used stainless. If it is a race car that comes apart all the time fine, but any street car that you will leave together for a while I would use stainless.
I've pulled PLENTY.. I guess you dont put sealant on yours.... if you do the only part that rust(if its in there for years) is the end of the bolt.... but buy what ever you want

I just use std carbon steel socket head cap screws on mine, just went to Fastenal,,use teflon thread sealer and paint the head silver and you wont know the difference.

I just use threaded rod cut to what I need
With being a plumber the all thread rod is a great idea... The pump has the nice recesses for the cap bolts, I would like to utilize the look. 3 need to be only 1" long (comes with 3/4"), thats no problem I found those. The problem is the other 4 need to be 3 3/4" . I like the idea of the none stainless cap bolts.
If you have the recess holes you need the cap screws but standard steel is fine... just put sealer on all of them

Stainless steel is junk. If you want a pretty engine that is fine but here is the deal. Stainless will gall and stick without rust. Guess what you now have a stainless steel bolt broke off in whatever. And it is harder than the material of your block or heads and a lot more difficult to get out.
Just bought an engine combo a few months back. Everything looked great. As I was pulling it apart the stainless bolts galled and pulled the thread out of several helicoil in the engine plate. Also the ones that were not helicoiled had to be helicoiled. And the one that went through and had a stainless nut on the back had to be cut off.
A lot of suppliers for signal systems on the railroad are using stainless bolts for some items. Well after years of going back and not being able to get things apart we have sense put either anti seize or silicone on the threads, which is what we already did on the grade 8 stuff.
So get over the hype and buy what you like or can afford and use antiseize on bolts that do not go in water and silicone on the ones that do.
