Wondering if anybody here can tell me how, or if it is possible, to test the coil packs on a 5.7 Hemi. I am not talking the accepted OHM readings, but possibly a test instrutment that will fire the coil pack and simulate RPM firing, to say, 7800 RPM.

I don't know of a test procedure that you can do. These coils have a lot more time to build a charge versus the old system of one coil for 8 cylinders. I talked to some Drag Pack racers, and they run the stock coil packs and twist the motors over 8,000 rpm. If you run a blower then you will probably need to reduce the plug gap. That is no big deal. Had to drop the gap a bit in my Mustang when I put 7 psi boost to it.
