What gains can you expect by going with the 2 4barrel carbs over the single carb

Yeah it does, but getting the plugs to look as even as they do with either the Indy single 4bbl or the Ray Barton single 4bbl takes a lot of work on the intake. Nothing even comes close to those except EFI...And even then, you need to do port work on the intake to match them up better. I should know.
Over the years, I have had almost every intake there is on a Hemi, and either of those two intakes with a good carb is really tough to beat. Bolt one of those on and a Proform or better carb, and never look back.
Which intake do you have on it now? If its an M1 dual plane, then yes, any other intake is better.

What about Indy's Modman intake? Huge open plenum on that one.

You can't lump them all together..
I ran a Vanke style intake with the mopar jetting kit for about 10 years and never.. never had any fuel-plug problems. I found out after swapping dozens of perfectly good plugs it was a waste of time and money.

Zip...
Single 4bbl, unless your going tunnel ram works best.
out of box mopar performance crossram with basically bone stock 4235/4236 (jetted to 79 squared on primary side) made 790hp 640ft and plugs are perfect across the board
