Are the seats themselves the same and the tracks different? Basically, if a guy had two passenger side seats could they put a driver's side track on one and make it a matched set? Thanks in advance.

They could but I'm not sure if they have a seat release. One would be on the wrong side. My 67 doesn't have a release latch but I think my 68 roadrunner bench does.

The seat release is easily swapped from side to side. A circlip holds it on the pin and there is a pin on both sides.

The seatbelt clip (where the belt is attached when not in use) will have to be moved on one seat but that's no big deal.
