Does your water pump/housing have a temp sending unit on top? If so, just crack it loose and listen for the air coming out. When you see water coming out, tighten it back up and you're done.
You can always drill a few holes in the thermostat if you do run one...that will bleed it out as you fill it up. If you're not running a thermostat, it won't need to be bled out.
