The shortblock in my '69 Swinger 340 was replaced in '70 with a new one due to some sort of problem according to the original owner, so some of the details were lost when swapped over. So, I'm trying to figure out if the following parts were installed pre-paint:

negative battery cable?
fuel pump (my original '69 dated pump looks to have some traces of paint)?
oil gauge sending unit?
water temp sending unit?

Also, what is the correct choke part # for a 4-spd equipped carb (if that makes a difference)?

69 Barracuda 340 negative batt cable: front of L head. Ignore the spring bracket, which does not look correct to me.

Sorry, my fuel pump's not original, so I can't help you there. But the Faxon "1969 Plymouth Engine Equipment Assembly Manual for Barracuda and Cuda" implies that the fuel pump was added after the engine was painted, same time as the carb, etc. Same might be true for the 69 Dart engine assembly manual - see:

Here is something I find interesting. Were these bolts painted while holding the water pump in place, then backed out to install the alternator brackets at the factory? You can see the water pump was replaced, as was the shortblock (the dealer mechanics never did paint it, just bare and rusty), but most all else, right down to the coil, are original assembly line parts.

The engine mounts and rubber fuel line are even date coded.

Thanks for those pics, it does appear that they were left unpainted. I just found more pics I took of my engine before it was disassembled. It shows the same as your's

Correct choke was the Carter "45", fastened with a 1/4-20 x 1/2 hex machine screw, stainless with phosphated captive split washer, which is interesting. There is no other stainless screw or bolt on my 69 Barracuda with a phosphated washer.

Yes, other posts to this forum have shown photos that the two blue machine screws were originally painted with the engine at the engine plant, then backed out and re-inserted with the triangular alternater bracket at the assembly plant during 'engine dress'. The other two fasteners, one machine screw and one long bolt, in the alternator bracket are unpainted and phosphated. That triangular bracket was dip painted.

Here's the back of Troy's 66K mile 69 Swinger 340 auto. SPD A04 (October 4, 1968) Los Angeles plant built.

Did they have the torque coverters on these motors when they sprayed them?

Note the negative battery cable bolt is painted. The negative cable was painted on the car. How much seems to vary.

Where the paint stops or if it did stop is a debate.

That is correct, it was the same way with 1970 and 71 340s.

Here is the original rubber line from the tank line to the fuel pump inlet. The ink stamped code is EB and the clamps are silver spring clamps on both ends. I assumed they would have used the crimp clamps like on my A12 Bee.

Here is the original throttle return spring color versus the repop in the baggie. It has a different coil count as well.

My firewall ground cable was almost painted the entire length.
