So I took it all apart again, checked all passages to make sure they were clear, blow them out with air. Put new gaskets on and put back to stock specs.
Still has problems.
Left the 850 on so we could drive and enjoy it.
Now looking at getting another 1000 cfm carb. The 850 makes it low on power compared to the 1000.
