I've done exactly what your thinking about on race cars, made the block off plates out of thin sheet aluminum and painted it the same color as the firewall Some of the early cars had a steel plate with two holes in them for the heater core ends to stick out of that was held in with one sheet metal screw between the heater hoses, you could do the same thing on the air conditioning hoses also
