For a street car, lower RPM engine, the 4.25" stroker kit with the shorter rod ratio is fine. It will produce alot of low end torque. On a 496" street engine you don't need to mess with the high compression pistons. The 20cc dished pistons should be good for around 10:1 compression with an 80cc head.
I have used the 440 source kits, and they are decent, but have everything inspected and checked if you don't have the tools to do it yourself.
Same with the source heads. Really any of the aftermarket heads need to be disasembled and cleaned as a minimum. I was surprised at how dirty the aftermarket heads are, and that is pretty much true for any of the brands.

The cam you mentioned is really too small for a 496" engine.
The 10230704LK would be OK in the engine 234/242 @ 0.050", 0.513"/0.533" lift. The Voodoo cams use a 3-bolt timing gear, so make sure to order the correct timing chain set for the cam you use.
