I think you are fine. yes you want em parallel/minimal angles when accelerating & you have the pinion a bit down from that to account for the "climb" so I'd say you are good if the shop did a good high speed balanceing & the ujoints moved freely back & forth in their plane of travel when checking by hand before you installed the shaft. EDIT I think I'd maybe lower the trans a bit to reduce that front angle then adj the pinion accordingly
