George...yes you can but typically you need to either relieve the Pump pick up and quite a bit of the pick-up boss...roughly .050 more than with a 4.15 crank. It often makes sense to offset drill the factory pump boss to allow more room or just use a 3/8 pick up to start.
the 4.25/2.200 fits in there with LESS work that a 4.15/2.375....that plus the more cubes and lighter bob is a big reason why it has become so popular.
As for the crank itself, you could do like I did and find a good used 4.15" 2.375 Crank with a wasted rod journal and offset grind it to 4.25 or up to 4.315.

Ahh, I forgot about K1. Yep, they do still offer a 2.375 rod journal crank in several different strokes.
