Only problem with taking the OEM one out is that you will have to drill and tap it for the mechanical sender to fit. You have to keep the probe in the flow of the coolant so don't use a stack of adapters to get it to fit. With the adapters you will not a constant flow and a risk of air pockets forming giving erroneous readings.

Use a heater hose port use a bell and or T and it will work fine and not have issues with air pockets

As long as you have the heater water valve open so that you get a constant flow rather than a back flush. You need flow and with a tee and in the heater hose the only way to get flow is to have the water valve open. It may work for you but it may not and may not be accurate.

take out one of the extra 3/8" pipe plugs that are in the intake close to the thermostat which is where you want it.
