I'm looking at a '95 dakota that has a 318 swapped into it from a 91 dakota that had TBI. If I was to buy the truck I would want to upgrade the engine to something with more power but I can't imagine that TBI fuel injection would do very well with any upgrades so I think the logical thing to do would be to swap it over to a carb. My concern is that I don't know how tough that would be. Has anyone completed a similar swap? Any tips or tricks?

new intake, carb and electronic distributor.
Not sure how it might play with the trans though, if an auto. Might need to install an OD and lockup kit. Similar to this

It would be the same as if you swapped a regular electronics ignition system in place of a points setup.

& a mechanical fuel pump and the earlier timing cover for that fuel pump & the Hughes engines' bolt on cam extension (it's cheap) so you'll have a lobe to actuate the pump lever

I was thinking I would use the electric fuel pump and just use a regulator to bring down the fuel pressure. That would work, wouldn't it?
