Where would you put a second temperature sender? Not replacing factory, but additional to say a 2005 Neon 4Cyl.

the easiest place to access the coolant where it is the hottest & if the 2 paired cyls have ex valves next to each other and if you can easily drill/tap the block near the deck at that point that'd b my choice
live every 24 hour block of time like it's your last day on earth
