Thoughts of a low deck dual-quad setup with a pair of 600 cfm carbs, will this work or will I need to re-jet?

A lot of guys use 600s or 660s with great results.

It'll work just fine, but be aware that any multiple carb setup is going to require some massaging and extra attention to tuning. If you're concerned about a simple jet change, then you might want to read up and fully understand carburetor function before you take a dive into the deep end of multiple carb tuning.

Should be a good setup, once dialed in; and the "wow" factor when you pop the hood is at the high end!

If you look in the tech archives you'll find this article that I wrote for Mopar Muscle magazine. I used a pair of 500 cfm Edelbrock carbs on my 505 engine. It made a little over 600 hp and it had a super smooth idle. That was a very nice combination which would've worked pretty well in a street car. It had a little too much compression for pump gas but fixing that wouldn't drop the power too much.
