Heres the combo. 360, stock deck height, srp flat top pistons with valve reliefs, and 63 cc edelbrock heads, .528 lift MP cam. Will valve to piston clearance be an issue or will i be ok?

Never run one without checking-- it is so easy to do--but....that combo should clear by a mile

stock 360 flatops are ~.123" in the hole. You might check what the compression height is of your new pistons & compare the dimention to the stockers & maybe get a rough idea.
