What are you guys running with the Goodyear Polyglas F60 15 tires. I'm thinking a 7 might be the ticket. But thought I would see what everyone is running or recommends. Thanks

Factory wheels for that size tire was 15x7. One of my cars has F60x15 polyglas and they are on 15x7 rally’s. I don’t know one way or another if they’d mount on 8” wheels.

Decades ago, I had a car that ran F60-15s on 15x8 steel wheels.
Had no problems, and I don't recall it having the typical bias-ply tracking issues.
If the OP's car is a restoration, I wouldn't do 8s, but it works.
For that matter, I haven't run bias-ply street tires since the '70s.
