What is the correct fan clutch for a 71 340 non AC car and correct fan? Pictures would be great. I assume the 7 blade fan the same as a 70 but not sure on the clutch.

That would be a 3462112 clutch unit. Checkout page four of this old post for pics of the 070 and 112 clutch comparison.

E-body 340 would get a 18.5” diameter fan (last three digits on part number 216)

It was not so much motor specific as body specific also. For the 71 340 if it was an A body it got the 215 fan. If it was E or B body it got the 216 fan. Standard was Torque drive. For AC it was Thermal drive. Except for B body 340. Both Standard and AC used thermal drive. All this from the 71 service manual chart in chapter 7 cooling.
