I am replacing my U-joints and figured I'd do the tail shaft seal while I have the drive shaft out. My question is do I grease/lube the seal or not?

Wouldn’t hurt ... I’d buff the slip spline with some 400 and then real lightly coat it with some white grease

Always lube a new seal! If you are going to use it soon, just a coat of trans fluid on the slip yoke and on the seal surface. If it is going to be a while before use, use some lithium grease like Doc said.
