Question.... Has anyone ever gone without a cam button in their build with a solid roller?

Do you mean opt for something else like a bearing? Use a belt or a gear drive...

You're gonna need something to keep the cam from walking. A button is the simplest method.

You can go without but it help the timing and timing chain last longer.
