I have a stock low mile 05 engine out of a magnum and a set of Eagle heads and pushrods from a 14 Challenger.
Also have OCP intake for eagle heads.

Are there any issues in swapping heads? PV clearance?
Seems most use thicker gaskets to keep CR down but I am not concerned about compression.
What head gasket would I use? Can I just use a Fel Pro replacement for an 05 5.7?

push rods will not work with a 05 short block, the cam base circle is different. you probably will need to grind the block at the top front to clear the manifold
