pretty sure the T/A team i work on uses VR1 60w
that's a popular oil for T/A. i still prefer the Brad Penn Nitro 70 for that type of motor.
i didn't see any mention of what the combo was. it's tough to make a recommendation when there's no info.

I run Castrol full synthetic 5 w 50. We tore the motor down last year and the bearings all looked like they just came out of the box.
I believe any brand name full syn oil will work just fine for you.

I forgot about your other question. I always break a fresh motor in with non synthetic oil. I've seen oil pressure problems when running a new motor on full syn.
Others may not agree, it's just what I do.

ICH said to run 20/50W in my engine. So would a straight weight oil work as well are better? I have been raceing Mopars since 1977 all big blocks.I have always used straight 30W oil in all of them.
