Do you see a problem just using one? Some seem to be OK with It?

I've been 8.90s at 150+ mph at 3900 lbs using just one. If it was gonna be a problem, pretty sure I'd have found it.

Like I said.. you can most like be fine with
one.. its a thing called "action-reaction)..
the engine/trans is still at zero speed when
the car starts to leave.. at some given time
the engine/trans does catch up.. till then things
are flexing and moving.. I put 2 on to eliminate
that part of the equation.. the harder the car leaves
the more force is applied to those limiters.. its up
to you.. it doesnt matter at the start how heavy the
car is on the limiters.. its holding the same weight
on the start

My chassis guy made a bracket that bolts to the pan rail and the other end mounts to the K frame.
