Curious on why they made them so tall compared to the earlier ones?

Possibly to allow a better baffle arrangement?

Because they could?

Because they know it'd bother people 35 years later?

Choose one.

IIRC, mid to late 70s all BB went to the tall "penthouse" VC. about the same time they went to the thicker HD rockers MP sold to replace thin stock rockers.

on my 78 MH 440 with the stock tall VC

the plug wire routing was the best of all the BB cars or trucks.

I had 2 drop off dist for #2 & #4. wires #6 #8 & #5 & #7 run down VC to rear of block dropping down to the 4 rear plugs 2 each side tucking in behind the manifolds. wires #1 & #3 drop down across the front driver side.

I was able to run them this way with the hedman 79250 headers and have good wire clearance on the tubes. I do run 8 heat socks on the firecore wires just in case.

only thing bad on tall VC is MC clearance in trucks and some cars.
