Will all accessories, valve covers, oil pan, oil pump, intake and exhaust interchange on a same year (carbureted) 318 and 360?

Valve covers yes, oil pan no, oil pump should be the same, the intake and exhaust will bolt up but the port sizes are different.

What's different about oil pan, assuming both engines were from a car?

If both engines are from a car you can swap them by keeping the pan on the engine. The rear main cap area is different.

Wish I saw you add looking for an engine a week ago as I could have brought you a good one for cheap while I was in seattle over the weekend.

I ask about the pan because I may buy a 360 long block that doesn't have a pan, and I have a 318 pan

Nope, you'll need a 360 pan and maybe an oil pickup tube to match the pan.

Port sizes on intake and exhaust may require some test fitting to see which one works best. For example, 360 ports are quite a bit larger than 318s and on the intake I'd probably try a 360 gasket. On the exhaust, I'd also probably try a 360 gasket first.

Ok. I have a edelbrock performer intake I can use, it probably has a port size closer to 360 than 318.

the pan half moon rounded cutouts are the same on the front cuz the timing covers, the rounded portion at the bottom are the same (ex for the cast in timing marks on the front which dont affect this) & the halfmoon cutout is bigger in the rear on the 318 pan cuz of the wider rear main cap. also I've seen (2) 360 "center sump" 360 pass pans (maybe others) (& they ain't exactly centered) & on one the sump starts ~2" back from a vertical plumb line straight down from the very front of the pan seal lip and on the other it starts ~4" and both sumps are ~8" long & take different pickups. iirc the #'s are 392 (might be 394) and 876 (if I can find my notes I will clarify the #'s and which is 2" and which is 4"). My 83 318 pan starts ~4" back. EDIT 2" on the 876 pan and 4" on the 392 pan and a 318 pickup from a 4" pan (dont have the # in front of me) would likely work on the 392 360 pan (same bends/length) cuz the sump appears to be in the same location and depth

My worry about port size mismatch has to do with getting the gaskets to seal. A gasket for a 318 may not seal if one of the surfaces pushing on it has a 360-sized port.

Check the left hand side motor mount . . . I think the 360 is moved back 1/2" on the driver side. It is same as the 340 . . . hence the bracket needs to be the correct one. Or maybe you can move the bracket to the "other side" of the ear on the block ??? . . . what year car are you doing ?? I went with a 360 in my 1970 Sport Satellite, when it was originally a 318 car. I had to find a left hand 340 engine mt bracket. Once I had that, it all fit like a glove. Also, had to use the 360 oil pan. One neat trick, on the exhaust manifolds, if you can find them, is a 318 powered 72 or 73 Road Runner - the exhaust manifolds on those have the port size for the 360, but look like regular 318 (even have 318 RR cast into the manifold). Other trick on these manifolds, is that on the right hand one, there is NO heat riser valve !! The manifold was cast without it !!
