I'm in the process of restoring/rebuilding the master cylinder for my '71 GTX. In '70 they were painted black along with the booster, but I know in '71 the booster was yellow zinc and the master appears to be a gray phosphate color, is that correct?

Yes, what you have is correct. The only exception is 71 hemi cars, which got the carry over '70 "9191" master cylinder which was painted black.

I darkened my master with black oxide solution and RPM'd it. I'm not sure what finish the lids are supposed to be in 71. I've seen a lot of yellow zinc ones. I've also seen phosphate lids. Maybe there was more than one vender?

I am not an expert on plating/coating, but I do know enough to question if a machined master cylinder casting can be phosphate coated without damaging the bore etc? From the attached picture of an NOS "1187" master cylinder, you can see the outlet bosses are machined after the casting was coated/plated.
Eastwood sells a spray product that is supposed to simulate phosphate coatings, I would try that, mask off the machined surface of the outlet bosses, install the cap, and spray the assembly except for the mounting flange/bore with the Eastwood spray paint.

Weren't they just bare cast? Have several originals that have rusted. I have a none pwr brake car that I just RPM'd the outside and it looks great after several years. I also have an nos pwr brake master that does not appear to have any coating just bare cast. FWIW
