How do you test the oil pressure, water temp, and alt. gauges. I bought a second rallye dash and i want to see if the guages work, and are accurate...

wire up 2 aa batteries in series so they give 3 volts.
Then connect them up to the gauage. should put it in the middle.
Gauges get 5 volts. Don't use a car battery or you could smoke them.

Basically you build the whole circut on the bench, then each gauge can be fine tuned with the trim adjustments on the back of the gauge...

10 Ohms = High reading
73 Ohms = Low reading

OK I kinda understand with an Ohm meter, but how do i do this and what should the reading be? Are they the same for each type gauge?

Not an Ohm meter resistors to act as the sending unit, Fuel, oil & temp all use the same resistance values for high & low readings... Ammeter doesn't fit this test very well... you can pass current through it & compare the results to a known calibrated gauge...
