What do you guys think? Is this a good idea? Will it peel? It shouldn't rust like a bumper because it's over aluminum instead of steel right? Will it still pit like some of the chromed pot metal mirrors I've seen? I've seen chromed aluminum intakes, and chromed aluminum wheels, would chrome be a good way to brighten up other aluminum parts?

I prefer polished aluminum myself but no reason you can't chrome them.

Shouldn't be a problem at all. I had some small block aluminum valve cover and timing cover chrome plated once before, held up nicely for years, until I sold the car.
I prefer it over ploshed aluminum as it won't dull.

Which do you think would be more durable, polished or chromed aluminum?

Well, thats sort of a loaded question. Chrome is more durable, but if and when you scratch it, or it pits. you're screwed. You cant buff or polish a scratch out. On the other hand, Aluminum will scratch and dull relatively easily, but you can polish out very easily.
Aluminum takes more maintenance, but you can fix it.
Chrome is less maintenance, but if something happens.....
