Here is a wiring chart we use, if you know how many amps your starter pulls and how long the cable is here's your answer. We use 1 gauge on most everything. I second the lithium battery, cost more upfront but lightweight and compact. I like the Prolite Lithium batteries www.prolitebatteries.com

MSD says run 2 gauge welding cable. Also per MSD I run a #4 gauge welding cable from each head to the side of the block where I also run the MSD ground wire and from there run a #4 gauge cable to the neg- side of the battery! Solved a Hi-Speed miss for me a few years back.

Dom it' good to run to a insulated stud or bulkhead connector (like dvw showed) at the dash area and feed the rest of the car. That way you are not using the starter as a junction block.
I would use #1 from battery to block, then #2 to starter.
