Is there any prep work I need to do before I install these gaskets in a 416" small block with Edelbrock heads ? The motor had approx. 800 miles on it.

I just installed a set on my rebuilt BB with Stealth heads. They said just clean them and install dry.

Whats 50ra finish ? Is this something I can do with a flat file or do they have to go to the machine shop ?

A 50 RA finisgh is real fine, so fine you shouldn't be able to see or feel lines between the cuts of the finish. It needs to be taken to a GOOD machine shop

First time I installed them dry per the instructions. No problems.
I had to pull the heads to fix a rocker arm issue, and re-used the gaskets, but I coated them with the copper head gasket paint stuff, and have had no problems with that method either.

They can be a pain to get sealed if the block/head surface aren't just right. Copper coat them before you put them on and it will help a ton.

As has been said --coat them with Permatex copper coat, let set up and install, on a properly prepared deck(head and block) surface. Your machine shop should use a PCD cutter for aluminum and a CBN for cast to get the proper RA/RV surface finish. J.Rob
