I went with a set of 596 castings, I had the machine shop go over them. New Manley severe duty valves, 2.02/1.60, 11/32 stem, new bronze guides, and a standard 3 angle valve job. I ported them using the MP porting templates, here are the flow numbers (flowed on SF-600 @ 28" water):

Intake manifold is killing the mid range that you are pulling through. Only way to cure that is to have a converter that flashes to 4500ish for overcoming the Strip Dom weaknesses.

I have a couple strip doms hanging on the wall for a reason... Fuel delivery could be an issue for lack of MPH.

A comparative from a slightly stronger, solid cammed combination. With a smaller cam, I'd expect the lower rpm delta to be the same or even worse.
