found a 2008 5.7 for a good price. is it good for a performance build or should I look for a newer model year?

How much is it and what are you looking to do? Factory intake or aftermarket? Stroker? If you’re doing a build, Eagle heads can be added, although early 5.7 heads can flow a ton of air as well, they’re just at the bottom rung (although the bottom rung is pretty high in this case, they flow 265+ untouched) of the factory offerings

Go for it. The 03-08 5.7 offers the most potential vs. cost other gen III engines IMHO. It is also the most versatile especially if you are thinking of using a carb.

Seriously, depending on what you want to do, it's your best starting point.
350-425 Hp is not that far away from a stock long block, a good crank,rods and pistons, 450 to about 550 is achievable with a set of worked stock heads. Eagle heads can get you to 600 NA.

A early 5.7 based 392 stroker would be killer
So easy to make power

I find the 09 up for half the price or even less than that vs the early ones. I've had 3 03-08s, all ended up with spun rod bearings. I'll never install another 03-08 without pulling and checking every bearing no matter what the mileage or how clean it looks.

What all is required to swap into a 67 Dart that currently has a 340 4 speed in it?

I won't install one with out removing everything factory, its like a 9 inch ford rear, once you remove all the factory stuff , you can really beat on them.

Motor mounts(http://www.engine-swaps.com/Pages/ProductsType/57.61Hemi.html#head6 )or front plate) Headers(TTI) and some form of ignition system, the MSD Hemi-6 seams to be a good one to start with for NA. if your going Fuel injection Megasquirt, or Holley EFI
Your Bell-housing will work , you just need a G3 hemi specific Flywheel.
