Cruising down the hwy ? .. 20-30 degrees warmer than your water-temp.
It also depends on your oil pan capacity.

I never see mine get above 160, but I only drag race 1/8 mile.

Drag racing over the coarse of the year max varies depending on ambient temp a little but I don't see over 180 but during fall and spring under 170. That's with the sensor at the inlet of the remote oil filter adapter.
