Being a stick guy I went with the six bolt for my new stroker just because my flywheels are six bolt

I've used both in my Duster street motor with the 727, I don't see a big difference on the automatic using a flex plate On a stick shift car the 8 bolts are 1/2 diameter instead of the 7/16 six bolt size which will by a better clamping force on the flywheel
