Which Thermostat?

This has probably been asked a dozen times here on moparts. Forgive me. Which coolant thermostat should I run? I've not fired my engine yet.i have a 160° stat that the mopar guy at the local speed shop sold me but since then I've read information suggesting a 190° would be better.

440 ,040 over
Cast iron closed chamber heads
Port and polished 2.14/1.81 valves
Harland Sharpe roller rockers
Eddy RPM intake
Holley 770 Street Avenger
Comp cams XE274 cam
1 7/8 TTi headers
2.5" exhaust with turbo mufflers to rear bumper
26" aluminum radiator
Viscous fan
A/C
Auto trans
3.91 sure grip

Either the 160 or a 180 max... the higher stats are more
for emissions reasons

Thanks, Mike. I have soon a little searching and from what I'm reading here on moparts, there's quite a bit of differing opinion on what works best. I guess I'll reinstall the 160 and run my engine in and see at what temp my engine likes to live. If it doesn't want to come up to the 190 range I'll change it out to 180 so that it will heat quicker and run closer to ideal.
