Is it ok to use a slide hammer on the edge of a fender (at the fender/door gap) after the fender's filler work has all been done? Or will the movement mess up the filler work?

Right now all of the filler is painted over with epoxy. If I see any cracks form I guess I'll have to go ahead and start over in that area. I should have made sure everything was perfect with the metal alignment before I started filler work.

try using mixing stick to bring out the fender, if you have hard plastic wedges, they work great for aligning panels,

Agreed. Sometimes the impact shock on the backside of sheet metal that has filler can cause it to separate from the metal, leaving no cracks or other visible signs. At least not for a while.
It really depends on how thick the filler is where the impact happens, and how hard the impact is.
