..everything new on this build, running 200 on the highway,195 around town
..could it be a little lean?
..anyone here lower the temperature by adjusting carb one or 2 stages richer?
Yes that and the timing. Try it, what do you have to lose? You will just learn something and know what the changes feel like in performance.
Tell us more about the timing.

Those things could help, certainly, but I'm also thinking a brand new motor that is breaking in will naturally run warmer, maybe even as long as the first few hundred miles.

I've certainly been wrong before, always been under the impression though that a new motor always would break-in, which would mean more friction and the like, even for the first hundred or so miles. I always thought this could account for 5 to maybe 10 degrees for a short period.
Back to the OP, clutch fan good? Running a full shroud?
Really I don't consider those temps out that out of line. Won't hurt a thing

340...L2316-30. xe-268, x heads,
stock fan shroud,new clutch fan,
12 initial,35 tot all in at 2400, 49 tot. w/vac advance and will ping about twice when i get on it w 91 octane
i tried E-10, 94 octane and it detonated badly ... makes me think lean.
compression is probably borderline for iron heads

..yes, 200 is probably ideal
least amount of wear, most power and most efficient
i just think it should run a littlte cooler on the highway than in town.

Yeah its not lean. The pinging is timing and poor combustion chamber dynamics. I would say the most vacuum advance you will get without ping is going to be around 40 to 43.

...i won't be able to do much for a few days...we are into a few rain days and i'm on a dirt concession..but 43 did help the detonation.
