Is there any type of plug or cap available that I can use on my 1968 transmission? I am not going to use a speedometer as it is race only. Thought that it may be possible to remove the gear from the trans and find a screw on cap.

Why bother. Leaving the gear in doesn't cause any harm and you don't gain anything by removing it.

Postage would cost more than the part, It is 1.75" deep freezeplug.

No info on a screw on cap but Munroes 727 bible states a 1&49/64" freeze plug. On your gram scale (my ten dollar Harbor Freight one works great ) see how many grams you are eliminating going from the alum speedo adapter to a Dorman steel freeze plug

The hole in the housing measures 1.755".

I found that a International Scout uses a Torqueflight with a threaded cap on the speedo adapter. They run the speedo from the transfer case. Not sure of the years but guessing 70's and 80's binders{IH}
