another question....

what degree thermostat should i use for my "340 intake on a 318" project. it didnt have a thermostat with the intake to see what it was before and my 318 had a 195 in it i believe. should i just get another 195 or go 180?

Either will be fine. I like the 195 myself.

I agree, those are the two best choices (unless someone makes a 185 or 190).
I choose 180's myself
