media blasting is better than acid dip, there are way too many horror stories after acid dip,few years later, the acid that wasn't completely washed out started some serious corrosion in tight areas,
There are alot of people who have soda blasted their cars, but if the metal is not treated right ,you may have alot of peeling issues,so if you choose to go that route, make sure the metal is neutralized before epoxy or any bodywork

I'd media blast

media blast because it's shot at the car so anything it takes off you can put back on with a spray gun. dipping will remove the paint from anyplace 2 panels come together like the deck lid ( trunk ) but how will you put it back on. In my opinion your asking for a rust problem. The media is hard to get out of the car but if you take your time and use an air blow gun and a good shopvac get as much as you can out when it comes home. Start doing bodywork your DA will vibrate alot of the media out then every other day push it outside blow the bodywork dust off and blow and suck every hole, crack and crevice ( takes about an hour)after about a week of this you will be media free. you will have the same problem with soda blast yes the soda will dissolve with water but the paint rust and crap that came off the car doesn't and I don't think anybody has come up with a solution for making paint stay on soda blasted metal.
