I have a chance to pick up a 727 from a 70RR that was rebuilt about 2yrs ago to stock specs, but never installed. I know the seller and he showed me the receipts, so I don't doubt the condition. The pan was loose so I could look inside and see it was clean/dry.
What is the "shelf life" for a 727 rebuild, that is, sitting dry, how long before it should be rechecked?

if the rebuild was done right, and the unit stored properly, not laying out behind a garage somewhere it should be good for a long time. personally if i got it, i would install it then fill with proper fluid and allow it to rest or seep in to all the internal areas for a day or so, then drive it. just my

Yes, it was stored indoors. He even wrapped it with plastic and sealed it.

I recenty sold one that I did back in 2000 !
So your two-year-deal should not be a problem.

I agree with all the above...If the trans was never run the seals will stay fresh for a very long time if stored indoors...After a trans is run and is heat cycled you run a greater risk of dried out/brittle seals during storage....
