And where do I take the measurement? I put some shims under the motor mounts and I'm not to sure if I like them... They helped for header clearance though... Just wondering what my options are... Also.... If I shim up the engine should I shim up the transmission too?

V-6 or 8 2 to 5 degrees should be fine. OEM's are 2 to as much as 7 degrees.I measure at the carb pad if it is level.Inline more and never 0 degrees as it will overly stress the crankshaft.

Carb pad is usually where you'd measure it.
Of course the floor has to be level too, or you compensate.

the carb (intake flange) is what you want "reasonably" level then with that set (mtr mts/and maybe trans mt) see what you have for ujoint angles & adj pinion/maybe trans mt as needed

and, this should only matter on carb engines. once the fuel is vaporized through the intake runners, or shot at the intake valve on EFI, it won't matter. from tunnel rams with vertical runners, to slant sixes with horizontal runners...
Then, think about what happens when you drive up a steep grade or go rock crawling. I'd say how level the carb is, is not THAT critical, so long as it's level enough that fuel doesn't spill out the vents and the floats work properly.

Isn't the carb flange on most intakes at an angle inorder to compensate for the factory angle of the engine? If that applies here then he would want to carbflange to be level, if he tilts it back further then he may have noo much angle. But yes compensate the pinion angle for any angle change.

Don't ask Mercedes!
The G-wagen was designed around an inline 6 diesel. When Benz decided to drop a gas V8 in there things didn't fit right. It didn't seem to bother the "engineered like no other vehicle" crowd.

As long as the drive shaft angle isn't excessive it doesn't matter. Carb angle , really? What do you think happens to fuel level on hard acceleration, nothing?

Check hood clearance before you slam it. Also fan clearances at radiator
